Cheesy Beef Puff Pastry Pockets

Golden, flaky puff pastry filled with juicy, seasoned beef and gooey melted cheese. These savoury pockets are perfect for snacks, lunch boxes, parties or an evening tea-time treat.

Preparation time: 20 minutes Baking time: 20–25 minutes Makes: 8 pockets

Ingredients

For the beef filling

  • 300 g minced beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp oil

  • ½ tsp salt, or to taste

  • ½ tsp black pepper

  • 1 tsp paprika or red chilli powder

  • ½ tsp cumin powder

  • 1 tbsp tomato ketchup

  • 1 tbsp chopped fresh coriander (optional)

For the cheesy filling

  • 1 cup grated mozzarella cheese

  • ¼ cup grated cheddar cheese

  • 1 small green chilli, finely chopped (optional)

For the pastry

  • 500 g ready-made puff pastry, thawed according to package instructions

  • 1 egg, beaten, for egg wash

  • 1 tbsp sesame seeds (optional)

Instructions

1. Cook the beef filling

  1. Heat the oil in a frying pan over medium heat.

  2. Add the chopped onion and cook for 3–4 minutes until softened.

  3. Add the garlic and cook for 30 seconds.

  4. Add the minced beef, salt, black pepper, paprika and cumin.

  5. Cook for 8–10 minutes, breaking up the meat, until browned and fully cooked.

  6. Stir in the ketchup and coriander.

  7. Let the filling cool completely before adding the cheese.

Important: A cool, relatively dry filling helps keep the pastry crisp and prevents it from becoming soggy.

2. Prepare the puff pastry

  1. Preheat the oven to 200°C (or 190°C fan).

  2. Lightly flour your work surface.

  3. Roll out the thawed pastry to approximately 3–4 mm thick, if needed.

  4. Cut into 8 equal squares, approximately 12–13 cm each.

3. Add the filling

  1. Mix the cooled beef with the mozzarella and cheddar.

  2. Place 2–3 tablespoons of filling in the centre of each pastry square.

  3. Fold each square diagonally into a triangle, or fold it into a rectangle.

  4. Press the edges together, then seal firmly with a fork.

  5. Avoid overfilling, as the cheese may leak out during baking.

4. Apply the egg wash

Arrange the pockets on a baking tray lined with baking paper. Brush the tops with beaten egg and sprinkle with sesame seeds if desired.

For extra crispness, refrigerate the assembled pockets for 10–15 minutes before baking.

5. Bake until golden

Bake for 20–25 minutes, until the pastry is puffed, deeply golden and crisp. If the pockets are large, they may need a few extra minutes.

Allow them to cool for 5 minutes before serving because the cheese filling will be very hot.

Tips for extra-delicious pastry pockets

  • Extra cheesy: Add a little cream cheese to the beef and cheese mixture.

  • Spicy Pakistani-style: Add green chillies, crushed red pepper and a pinch of garam masala.

  • More vegetables: Mix in finely diced capsicum, sweetcorn or mushrooms, ensuring excess moisture is cooked off.

  • Crispier pastry: Keep the pastry cold while working and always use cooled filling.

  • Make ahead: Assemble the pockets and refrigerate briefly before baking, or freeze unbaked pockets in a single layer. Bake from frozen at 200°C, adding extra time as needed.

Serving suggestions

Serve hot with garlic mayo, spicy ketchup, mint chutney or a creamy cheese dip.

Best combination: Juicy beef, mozzarella for stretchy cheese and cheddar for a richer flavour, all wrapped in buttery, flaky pastry.
