-
Bring a pot of water to a boil.

-
Drain and rinse briefly with cool water to stop the cooking.

-
Beat the eggs with a small pinch of salt.

Pour into the pan and scramble until just cooked.
-
Remove the eggs and set aside.

Add the remaining oil to the same pan.
-
Add the garlic and onion; stir-fry for 1–2 minutes.

Cook over medium-high heat for 3–4 minutes, keeping the vegetables slightly crunchy.

In a small bowl, mix the soy sauce, chilli sauce, ketchup, vinegar and black pepper.
Pour the sauce over the vegetables and toss well.
5. Combine everything
-
Add the cooked noodles and scrambled eggs to the pan.

Tips for delicious homestyle noodles
-
For a Pakistani-style flavour: Add green chillies, a pinch of red chilli flakes and a little extra black pepper.
-
For extra protein: Add shredded cooked chicken or thin strips of beef.
-
For better texture: Avoid overcooking the noodles before stir-frying.
-
For a richer taste: Add a small knob of butter at the end.
-
For spicy garlic noodles: Add an extra clove of garlic and increase the chilli sauce.
Serving suggestion
Serve hot with spring onions, chilli flakes and a side of crispy chicken or vegetable spring rolls.
Quick tip: Prepare all your vegetables and sauce before heating the wok. Stir-frying happens quickly, and this helps keep the noodles flavourful rather than soggy.
