Prep time: 10 minutes Cooking time: 15 minutes Servings: 4 wraps

Ingredients

For the beef filling

  • 500 g ground beef

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp cooking oil

  • 1 tsp paprika

  • ½ tsp cumin powder

  • ½ tsp chilli powder (adjust to taste)

  • ½ tsp black pepper

  • Salt to taste

  • 2 tbsp water, if needed

For the wraps

  • 4 large flour tortillas

  • 1 cup grated mozzarella cheese

  • ½ cup grated cheddar cheese

  • 2 tbsp butter or oil, for toasting

For the creamy sauce

  • 3 tbsp mayonnaise

  • 1 tbsp ketchup

  • 1 small garlic clove, minced (optional)

  • ½ tsp lemon juice

Instructions

Step 1: Cook the ground beef

  1. Heat 1 tablespoon of oil in a pan over medium heat.

  2. Add the chopped onion and cook for 2–3 minutes until softened.

  3. Add the garlic and cook for 30 seconds.

  4. Add the ground beef and break it apart with a spoon.

  5. Cook until browned and fully cooked through, with no pink remaining.

Step 2: Season the beef

  1. Add paprika, cumin, chilli powder, black pepper, and salt.

  2. Mix well and cook for another 2–3 minutes.

  3. Add a little water if the beef is too dry. Let excess liquid evaporate so the wraps don’t become soggy.

Step 3: Prepare the sauce

Mix the mayonnaise, ketchup, minced garlic, and lemon juice in a small bowl until smooth.

Step 4: Assemble the wraps

  1. Lay the tortillas flat.

  2. Spread a thin layer of sauce over each tortilla.

  3. Add a generous portion of cooked ground beef.

  4. Sprinkle mozzarella and cheddar cheese over the beef.

  5. Fold in the sides and roll each tortilla tightly.

Step 5: Toast until crispy

  1. Heat a little butter or oil in a non-stick pan over medium-low heat.

  2. Place each wrap seam-side down.

  3. Cook for 2–3 minutes per side until golden brown and crispy.

  4. Turn gently and cook until the cheese melts completely.

Tips for the best cheesy wraps

  • For extra cheese: Add another handful of mozzarella before folding.

  • For a spicy kick: Add chopped green chillies or hot sauce to the beef.

  • For a creamy filling: Mix 2 tablespoons of cream cheese into the cooked beef.

  • For a fast-food flavour: Add pickles and a little burger sauce.

  • For extra crispiness: Don’t overfill the tortillas, and cook over medium-low heat so the cheese melts before the outside burns.

Serve immediately with garlic mayo, French fries, or coleslaw.

Enjoy your homemade cheesy beef wraps!
