Fluffy, protein-rich pancakes made with cottage cheese, oats and eggs. They’re naturally satisfying, easy to prepare and perfect for a healthy breakfast.
Preparation time: 5 minutes Cooking time: 10–15 minutes Servings: 2 (about 6–8 small pancakes)
Ingredients
-
1 cup cottage cheese (about 200–225 g)
-
2 large eggs
-
½ cup rolled oats (45–50 g)
-
1 tsp baking powder
-
1 tsp vanilla essence
-
½ tsp cinnamon powder (optional)
-
1–2 tsp honey or maple syrup (optional)
-
A pinch of salt
-
1–2 tsp butter or oil for cooking
Instructions
1. Prepare the batter
Add the cottage cheese, eggs, oats, baking powder, vanilla, cinnamon and salt to a blender. Blend until mostly smooth.
If you prefer more texture, pulse briefly so some oats remain visible.
2. Rest the mixture
Let the batter rest for 3–5 minutes so the oats absorb some moisture. If it becomes too thick, add 1–2 tablespoons of milk.
3. Heat the pan
Place a non-stick frying pan over medium-low heat and lightly grease it with butter or oil.
4. Cook the pancakes
-
Spoon about 2 tablespoons of batter into the pan for each pancake.
-
Cook for 2–3 minutes until the edges look set and the underside is golden.
-
Flip carefully and cook for another 1–2 minutes, until the centre is fully cooked.
-
Repeat with the remaining batter.
5. Serve
Stack the pancakes and serve warm with fresh berries, sliced banana, Greek yogurt, honey or a little peanut butter.
Tips for perfect pancakes
-
For extra fluffiness: Blend the batter well and avoid cooking over high heat.
-
For a sweeter flavour: Add half a mashed banana to the batter.
-
For more protein: Serve with Greek yogurt or extra cottage cheese.
-
For a gluten-free version: Use certified gluten-free oats.
-
For a smoother texture: Blend the cottage cheese until completely creamy before adding the other ingredients.
Storage
-
Refrigerate leftovers in an airtight container for up to 3 days.
-
Reheat in a non-stick pan or microwave until hot.
-
Freeze between sheets of baking paper for up to 2 months.
Serving idea: Top with banana slices, cinnamon and a spoonful of Greek yogurt for a delicious breakfast with protein, fibre and slow-digesting carbohydrates.
